Walnuts, Peanuts and Split Gram Dal Sauce : Blend 1/4 cup Walnuts, 1/4 cup peanuts, 1/2 cup roasted Split Gram Dal, 1 lime juice/ tamarind concentrate, 1 teaspoon soy sauce(optional), little more than 1 tablespoon sugar, salt, red chili powder in blender with little water.

Pad Thai Noodles - I used flat rice noodles [any noodles r great] mixed with above sauce and drizzle of olive oil. I added dry roasted tofu and blanched broccoli. You can add any of your kids favorite vegetables (For me I add sauteed bok choy, spinach, Swiss chard, cabbage, lettuce, carrots etc) I microwaved it for more than a minute and gave it in the hot lunch box.
with some grapes and strawberries.
This homemade pad thai is Roo's favorite with broccolli and tofu.
Roo ate everything from this lunch box. :)
